DescriptionThis side dish is served over rice or by itself and goes with just about anything; red beans and rice, cabbage and rice, pork chops, anything... It's a good replacement and change of pace for fried potatoes or potato salad and it's delicious and it's quick and easy to fix.
What you'll need
1 large cast iron skillet with cover
1 large spatula
1 large cooking knife
1 Mandolin or grater
1 serving dishIngredients
2 large Russet or Idaho potatoes peeled and sliced thin (about 1/8")
1 large Brown or Yellow onion peeled and sliced thin (about 1/8")
Vegetable oil
Salt, Paprika and black pepperWhat you need to doSalt and pepper potatoes and onions separately. Mixing them so the seasonings are on each slice. Put about 1/8" of vegetable oil in the skillet over low heat. Arrange and level potatoes in pan, cover completely with onions. Cover. Let cook for about 5 minutes and turn potatoes and onions. Cover for another 5 minutes. Remove the cover and set aside. Raise the heat to medium and turn the potatoes and onions repeatedly, browning the potatoes and onions. Don't worry that the ingredients stick to the bottom of the pan! This is flavor. Simply turn the spatula over and scrape the bottom of the pan while turning the potatoes. When the potatoes are brown on the edges, sprinkle with Paprika and remove to serving dish.
