Cajun Potato Chips

DescriptionThis is the appetizer or side dish to end them all. You'll not only not be able to eat just one, you'll be eating three and four at a time! They're hot, crispy, crunchy, flavorful, enticing and delicious and they go great with burgers or just by themselves.
What you need
1 cast iron frying pan
1 spatula
1 grater
1 8" - 10" stainless steel strainer
1 large serving bowlIngredients
1 pound russet or Irish Potatoes
Tony Chachere's Creole Seasoning or Louisiana Cajun Seasoning
Crisco All-Vegetable shorteningWhat you need to do
Wash potatoes. Do not peel. Grate potatoes on the Mandolin or the "smiling side" of the grater. Over high heat put a handfull (no more) of potatoes in Crisco All-Vegetable shortening and fry, stirring and separating slices. When they are golden brown remove them to strainer, shake and and let drain. When the next batch is done, dump the strainer into a serving bowl and repeat the process. Repeat process until all potatoes are fried. Then sprinkle with Cajun seasoning. Shake and serve.
